Preparation 

Peel, chop and boil the potatoes until done. Use a potato press or a sieve to make finely mashed potatoes. Add the butter, nutmeg, salt and five egg yolks and mix until the mixture is smooth with an airy consistency.

Shaping the potatoes 

Using a piping bag, create walnut-sized shapes similar to piping frosting on a cupcake. Mix the 6th egg yolk with some salt to egg wash the potatoes mounds. Bake in the oven for 10 minutes. 

Tips and Tricks

  • Make sure that your mashed potatoes are as fine as possible to avoid clogging the nuzzle

  • Try adding grated cheese on top before baking to add a crispy touch
